Pie Hard beautifully brings together some of the most binge-worthy foods possible: pizza and frozen custard. When owners Michael Pastor and Megan Keefe wanted to trade in their food truck for a brick-and-mortar location on the charming main drag in downtown Waterloo, Illinois, they came to SPACE for architecture and interior design.
The location was a former Subway, so it was very small with low ceilings. Within the walls, we carved out a prep kitchen, space for Michael’s new wood-fired oven, a small bar, and frozen custard service that would operate through an operable front window.
The palette is simple, using natural materials and Pie Hard’s branded blue. A new tin-look ceiling helps the space feel larger than it really is. Our fabrication team built the modern booths and steel elements. Michael and Megan added a mural on the west wall, and that is mirrored by beautiful natural brick on the east. Michael’s matte-black oven is front-and-center, providing entertainment for hungry diners.
